I love seafood and meat! But I’ve trying to eat more vegan dishes because I’m trying to get healthier and lean and this this Vegan Ceviche Recipe with Avocados dropped into my email, what caught my eye was the Avocados because I’m a huge fan of avocados, I could eat them every day and add them to anything!

diabetes, which runs in my family, so I’m doing everything to feed my family healthy meals.
It’s super simple to prepare this recipe it took me less than 15 minutes and my family loved it! So here’s Vegan Ceviche Recipe with Avocados!
- 1 ripe, fresh Hass avocado, halved, pitted, peeled and cubed
- 1 cup cauliflower, diced
- 2 tomatoes, diced
- 1/3 cup red onion, finely diced
- 1 Tbsp. jalapeno pepper, minced
- 1 clove garlic, minced
- 1 Tbsp fresh cilantro, chopped
- 1Tbsp lime juice
- 1/2 tsp salt
- 1 Tbsp olive oil
- Serves 4.
- In a large bowl combine all the ingredients and mix well. You can serve it with tostadas or chips
Since the recipe doesn’t have any shrimp and has cauliflower instead I was a little doubtful my kids will eat it, but they loved it! If your kids don’t eat spicy food skip the jalapeños, you can chopped them and put them on the side for the rest of the family who likes chiles.
